Zucchini Slippers

four zucchinis

one and a half cups of shredded sharp Cheddar cheese or a four-cheese blend

one cup of Philadelphia Cream Cheese

two tablespoons of fresh chopped parsley

half a cup of finely diced white onion

add salt and pepper to suit your taste

 

Instructions:

 

Trim and discard the ends of the zucchini, scrub them well, and cook whole in boiling salted water for 7–8 minutes. Remove from the water and slice in half lengthwise. Using a sharp knife, outline a “boat” shape around the seed pod, then scoop out the seeds with a spoon, keeping the zucchini “shell” intact. Drain the shells face down on a paper towel-lined plate. In a large bowl, mix Philadelphia cream cheese with chopped onion, parsley, salt, and pepper. Place the zucchini “slippers” in an oven-safe dish and fill with the cheese mixture. Sprinkle shredded cheese over the top. Bake uncovered at 350°F for 15 minutes, then increase the temperature to 450°F and bake for another 5 minutes, or until golden brown. Enjoy!
