Apricot Chicken

1. A jar of apricot preserves
2 chicken breasts, roughly 4 to 6 pieces
3 – Garlic, 2 cloves
4 – Basil, roughly 5 or 6 leaves
5 – Add a pinch of salt
6 – Add a pinch of pepper
1 envelope of Onion Recipe Soup & Dip Mix (I like to use Lipton)
Here’s a quick, simple recipe: Rub the chicken with garlic and basil, then season with salt and pepper. Let it chill in the fridge for at least 30 minutes. In a separate bowl, combine apricot preserves with onion soup mix. Place the chicken in a deep baking dish and pour the apricot-onion mixture over it. Cover with foil and bake at 350°F for 45 minutes to 1 hour, depending on your oven. This flavorful chicken goes great with white rice or vegetables. Enjoy!
