Broiled Tomatoes
Easy
15 to 20 minutes
1- Tomatoes: choose firm, round ones and broil as many as you want
2. Basil for garnish
3 – Olive Oil [The finest olive oil available]
4- Salt
5- Pepper
Cut your tomatoes in half and sprinkle them with salt and pepper. Drizzle about 2 tablespoons of olive oil over each half, being generous. Place them in the oven on broil until they turn golden brown, about 10 to 15 minutes depending on your oven—just keep an eye on them. While they cook, pour yourself a glass of wine and maybe enjoy a cookie or two. Once done, remove from the oven and top each tomato with a fresh basil leaf. Enjoy!
