Gazpacho Cordobés

Quick and easy recipe

 

1 pound of sliced white bread

1 medium-sized green pepper

One cup of cooking oil

3 large, ripe tomatoes

3 cloves of garlic

Half a cup of distilled white vinegar

Salt and pepper to taste

Crispy croutons

 

 Soak the bread in a large bowl of cold water for 5-10 minutes, then drain, leaving it slightly damp. Chop the tomatoes, green peppers, and garlic, and measure the oil and vinegar. Blend all ingredients in an electric blender until smooth, then pour into a large bowl and season with salt and pepper. Cover and refrigerate for at least 1 hour. Serve with chopped ripe tomatoes, green peppers, onions, and optional croutons on the side. Enjoy!
