Sweet Potato in Syrup Sauce

Seven sweet potatoes

4 oz. of unsalted butter

1 cup of water

Two cinnamon sticks

1/4 cup brown sugar

1 teaspoon of vanilla extract

¼ cup white rum

¼ cup of Licor 43 (amaretto may be substituted)

 

In a large pot, melt the butter and add the sweet potatoes. Combine all ingredients, except the rum and liqueur, and cook covered for approximately 20 minutes. Then, carefully add the rum and liqueur, taking caution to avoid splashing. Continue to stir occasionally over medium heat until the sweet potatoes are tender and perfectly cooked.
