Spaghetti with Rapini (Spaghetti How-Do-You-Do)

A package of No. 8 spaghetti
A one-pound bunch of rapini
Half a cup of olive oil
Five garlic cloves, chopped medium to fine
A teaspoon of salt
One-quarter teaspoon of pepper
Eight fresh leaves of basil
6 ounces of baby mushrooms

 

Instructions for Cooking:

 

Boil a pot of water and cook the spaghetti following the package directions. In a large skillet, warm some olive oil and add minced garlic, mushrooms, and basil leaves. Season with salt and pepper, stirring often until the garlic turns lightly golden, then take off the heat. About five minutes before the pasta is ready, add the rapini to the pot and toss gently with tongs until the spaghetti is al dente. Drain the pasta and rapini in a colander, then transfer them to a bowl. Pour the olive oil mixture with garlic, mushrooms, and basil over the pasta, mix well, and serve with parmesan cheese if you like. Enjoy!
