Spaghetti Squash with Italian Sausage

  • 1 Spaghetti Squash
  • 1 Package Italian Mild Sausage
  • 4 Cloves Garlic, minced
  • 8 Basil, chopped
  • 1 Tablespoon Olive Oil, the best one you can get your hands on
  • 1 Teaspoon Adobo, spice section at the supermarket
  • 1/2 Teaspoon Pepper
  • Pinch Salt
  • 1/2 Teaspoon Brown Sugar, to cut the acidity from the tomato puree
  • 1 Can Tomato Puree, I use the Italian brand
  • 1/4 Onion, minced

    Cut the squash in half and remove seeds and pulp from center, brush the squash with olive oil all around it and sprinkle  salt on each half . Place the squash upside down in a baking dish on a 350 F degrees oven .  It takes 45 minutes to 1 hour to cook.  With a fork scrape all the pulp from the squash and it should come out in strands.

    Italian Sausage Marinara Sauce:
    In a deep pan pour 1 tablespoon of olive oil , garlic , basil and onion . Stir until is soft [ make sure it does not burn ]  then add the Italian sausage cut it  in quarters and cook . Seasoned with pepper ,salt ,adobo . Once the sausage is browned add the tomato puree and the brown sugar. Let it cook for 30 to 45 minutes . Enjoy!
