Eggplant Pasta Sauce

Ingredients

  • 3 Medium Size Eggplant, cut in quarters
  • 7 Tablespoons Olive Oil, the best one you can get your hands on
  • 5 Cloves Garlic, minced
  • Handful Basil, chopped
  • 1/2 Onion, chopped
  • Pinch Salt
  • Pinch Pepper
  • Pinch Oregano
  • 1 Can Tomato Puree, I use the Italian brand
  • 1/2 Tablespoon Brown Sugar, just to cut the acidity from the tomato puree
  • 1/2 Teaspoon Adobo, spice section at the supermarket

    This recipe is the star of any dinner party . You can serve it with any pasta or as a snack with chips.

    Wash and slice the eggplant , cut into squares . In a deep saucepan add the olive oil and eggplant. Chopped  basil, onion, garlic [ minced ]. Add  salt, pepper ,oregano and adobo. Let it cook for at least 1/2 hour or until the eggplant is soft . Add the tomato puree and brown sugar . Place lid and let it cook for 1 hour . I let it cook for more time but 1 hour is fine . Serve with any pasta [ I cook mine al dente] and a  nice glass of wine.  Enjoy!
